Method:
• Add 1 cup water to the chopped fruit.
• Bring to a boil and simmer for 2 minutes.
• Add sugar after removing from fire.
• Cool to room temperature.
• Blend in a mixie till smooth.
• Strain pulp through a colander.
• Add essence, colour, ice, salt and pepper.
• Beat with an electric beater till frothy.
• Serve in glasses.
Note: Soft fruit like papaya, mango, watermelon, orange, need not be boiled. Add these at time of blending.
